All ingredients should be cold.
2 1/2 c. all-purpose flour
1/4 tsp. salt (omit if using salted butter)
3 Tbsp. sugar
1 c. unsalted butter, chilled and cut into small pieces
4 Tbsp. ice water
2 large egg yolks, lightly beaten
*Heavy Whipping Cream
Sugar for sprinkling
In a food processor add the flour, salt and sugar. Add the butter and pulse until it looks like coarse meal.
In a small bowl combine the ice water and egg yolks, blend well. Slowly pour into food processor while running; process just until dough holds together. If dough is too dry add a bit more water.
Divide the dough in half and form into two discs. Wrap each well and chill or at least an hour.
After the dough has been rolled and formed into pies using a pastry brush brush on the whipping cream and sprinkle with sugar. Bake according to pie recipe.
*you can also add a beaten egg white to a bit of cream and brush on the pie in replacement of the cream.
