We have been making our own tortillas now since my 10 year old was little. He's never liked them store bought and he's a bit spoiled in the tortilla department if you ask me. We used to use a recipe that yielded a thicker tortilla and while it was good I wanted to find something that fit our taste a bit better.
3c flour
1tsp salt
1/3c canola oil*
1c warm water
Mix ingredients together and knead until soft and smooth being sure there are no pockets of dry or wet ingredients.
Cover dough and let rest for about 20 minutes.
Divide dough into about 12 pieces. I use my scale and measure 50g portions.
Roll the dough out on a lightly floured surface and cook on a hot skillet until bubbly, flip and cook until slightly browned. I like using cast iron for my tortillas.
To keep warm pre-heat your oven to the lowest setting. Dampen a dish towel VERY lightly with HOT water, be sure the towel was NOT laundered with fabric softener or strong detergent (nobody likes a Tide flavored tortilla....trust me I know). Place tortillas on an oven-proof plate & cover with dampened cloth. If your cloth dries out re-dampen.

*not a fan of lard and in my last tortilla recipe I would substitute coconut oil because it has similar texture....I even went so far as to use bacon drippings that had solidified because I was out of coconut oil but they definitely tasted like bacon tortillas. We love the smooth texture the canola oil gives.
